Fresh Lemonade with Honey

It might still be snowing on and off in Rochester, NY. The honeybees are still keeping warm in their hives. The sun is still hiding behind grey clouds, but there are robins out and about and patches of green grass peaking through the snow. Just enough to tease you for the idea of spring. So in honor of the coming season, we are enjoying the flavors of the spring and summer. 

Fresh lemonade with honey to sweeten it is the most refreshing beverage when the hot months come. We found this recipe from a lovely recipe blog, Cook Eat Paleo. For now we are dreaming of warm sun rays and bright blue skies, but the lemonade helps remind us that those times are right around the corner!

  • 3 cups filtered water, divided
  • 1/4 to 1/3 cup raw honey
  • 1 cup fresh squeezed lemon juice (about 6 lemons)
  • ice
  • orange slices for serving
Heat 1 cup of the filtered water in a saucepan over medium heat. Remove from heat and add honey, as much as desired for sweetness. Stir until dissolved. Pour mixture into a pitcher, along with the remaining water and lemon juice. Stir then chill. Once cold, pour over ice and garnish with an orange slice. Enjoy!
